Tasty Tuesday: Pumpkin Muffins

My almost 10 year old son is not your typical 10 year old. He doesn’t like television (we don’t have cable), has no interest in “family electronics” such as Xbox and Wii (again, we don’t have them), and never plays games on the computer (have the computer but no games on it). However, he has developed an interest in photography. This past summer, Skipper has progressed from race pictures which are blurred or have heads cut off to this – my race to a second place finish in the 10K. When he can come out with pictures like this (when the official race photographers produce horrible photos), it’s easy to forgive him for missing me at the 5K mark.

Pumpkin Muffins

This is another one of my dad’s great recipes. The boys have no idea that there is pumpkin in them.

3/4 cup natural bran
3/4 cup whole wheat flour
3/4 cup white sugar
1 1/2 tsp cinnamon
1 tsp. baking powder
1 tsp baking soda
1/2 tsp salt
1 cup raisins (sometimes, we’ll substitute chocolate chip)
1 cup mashed or canned cooked pumpkin
2 eggs
1/2 cup vegetable oil
1/2 cup plain yogurt (or buttermilk)

In a bowl, combine bran, flour, sugar, cinnamon, baking soda, baking powder, salt and raisins. Toss to mix.

Add pumpkin, eggs, oil and yogurt. Stir just until well-combined.

Spoon batter into paper-lined or nonstick muffin tines. Bake in 400F over for 25 minutes (or until firm to touch). Makes 12 muffins.

The scoop: 185 calories per muffin, 8 g fat

  1. What a great hobby for your son. You get your own personal photographer, nothing better than that!
    I just bloged about my pumpkin bread, it must be a fall thing….LOL Your pumpkin muffins sound yummy, I will have to try them!
