Tasty Tuesday – C.J’s muffins

My boys love it when I race in Toronto because they get to see their grandparents after and my dad, C.J., makes delicious muffins. Usually, C.J. sends a batch home with us and I have to hide them in the fridge so that I have some to put in their lunches the next day!

C.J’s Oatmeal Banana Chocolate Chip Muffins

1 egg, lightly beaten
1/2 cup milk
1/4 cup vegetable oil
1/2 cup white sugar
1 cup mashed bananas
1 tsp. vanilla
1 cup whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1 cup oat bran
1/2 cup chocolate chips

In a bowl, combine egg, milk, oil, sugar, bananas and vanilla; mix well.

In another bowl, mix flour, baking soda, baking powder, oat bran and chocolate chips. Stir into egg mixture, mixing only until combined.

Spoon into 12 nonstick muffin tins, filling each about 2/3 full. Bake in a preheated 400F oven for 20 to 25 minutes – or until firm to the touch. Makes 12 muffins.
